It's that time again ... LEFTOVERS! The brilliant thing about leftovers is that I can often cook only 3 times a week and still have 7 meals for everyone without requiring a lobotomy or a vodka gimlet!
THIS IS NOT COMMENTARY ON THE FOLKS WHO MAKE MEALS FROM SCRATCH EVERY DAY.
Y'all do you. I can't do that. You know what else I can't do? Make my own dopamine. The best mom? The one who's happy.
My chicken chili redo was WILD. I cooked a mountain of rice and added it until the chili resembled a burrito bowl from Chipotle. Then, I took my flour tortillas (burrito size) and I heaped a spoonful onto each tortilla. A handful of cheese (we are Midwestern, so we do measure with our heart), and left, bottom, right, top - BAM! Burrito!
Hot skillet. Grill on both sides. Served with sour cream and salsa and some slices of avocado.
I had enough chili left over that I made about 20 burritos. I had no burritos left. Big. Backs. I'm telling you. I do feed my children; I swear it!
