January 3rd - Broccoli & Cheese Leftovers

The beautiful thing about soup is that you often make more of it than you really need, and then what do you do? Well, if you're me (i.e. grew up with food insecurity), you make every scrap last because that's what you do. #UnresolvedTrauma
Generally, a pot of soup is going to last us 2 meals, but that doesn't mean those meals are going to look the same.
Remember the loaf of bread I made? Well, we still had half of it left, and so I sliced that into very thin slices and used it to make grilled cheese sandwich "sticks" to dunk into the soup. Easy. Peasy. Lemon. Squeezy.
Remember, leftovers don't need to be complicated, and they don't need to be boring. Find a way to shake them up a little bit, so they seem more fun than they are.
In the interest of transparency, there was still 3 portions of soup left once we'd done this. Those portions were frozen, individually, for me to grab for lunch on the days when I don't have the time on the calendar to actually make myself something. Moms need to eat too!
